Olive pulp is a product obtained after oil extraction, leaving the pulp with 8% fat after centrifugation, removal of the pit, and drying in a trommel at 80 degrees Celsius. This process extracts the olive pulp itself with a fatty acid profile rich in OLEIC C18:1 (around 75%), along with other minor yet important compounds such as the olive’s natural antioxidant Hydroxytyrosol and Oleanolic acid.
